Oatmeal Raisin Cookie Recipe
Ingredients:
2 cups of flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup unsalted butter, softened
1 cup sugar
1 cup brown sugar, firmly packed
2 large eggs
2 teaspoons vanilla
3 cups of oats (not instant)
Directions:
Preheat oven to 350 degrees.
Grease cookie sheets.
Put the flour, baking powder, baking soda and salt into a bowl and set aside.
Put the softened butter in a second bowl and mix it until it is creamy.
Add the sugar, brown sugar, eggs and vanilla to the bowl.
Stir the flour mixture into the creamed mixture. Do not over mix the ingredients, because it will make the cookies tough.
Stir in the oats and raisins in until they are even mixed in.
Drop spoonfuls of the cookie dough 2 inches apart onto a greased cookie sheet.
Bake for 11-13 minutes.
Remove from oven and let them sit for 2 minutes before moving them to a wire rack to cool.
