Fandango Stew


Fandango Stew a recipe for kids to make

Fandango Stew

Ingredients:

  • 1 lb. ground beef

  • 1 chopped up red onion

  • 6 sliced up mini orange, yellow & red sweet peppers

  • 1 can kidney beans

  • 3/4 water

  • 1 cup fresh corn (or 1 small can)

  • 1 small can of diced tomatoes

  • 1 teaspoon of cumin

  • 1 teaspoon garlic salt

  • 1 teaspoon chili powder

  • 1/2 teaspoon cornstarch

  • 1/4 teaspoon pepper flakes

  • 1/2 teaspoon oregano

  • 1 minced garlic clove

  • cilantro, chopped up, as well as optional garnishes listed below.

Directions:

  1. Brown the ground beef in an electric wok or a stew pot.

  2. Once the meat is no longer pink, put in the chopped red onion, corn and sweet peppers and cook until soft.

  3. Add the water, cumin, garlic salt, chili powder, constarch, pepper flakes, garlic and oregano.

  4. Add undrained cans of beans and tomatoes to the stew.

  5. Heat through.

  6. Serve in bowls with chopped up cilantro on top. Optional garnishes can be cheese, sour cream, crushed up tortilla chips and/or a lime.

*With adult supervision, the electric wok can be a good cooking device for children. It is what I use in class. I find it safer than a stove burner. I bought mine through Target online.
