Cupcakes & White Chocolate Macadamia Nut Cookies



Last week we created our own virtual cupcake bakery, logo and menu. Each SproutChef got nine cupcakes to decorate and name for their cupcake bakery menu. As always, I was blown away by the creativity. The pictures do not do the cupcake creations justice.










White Chocolate Macadamia Nut Cookies


Preheat oven to 350 degrees F

Ingredients:

  • 1 cup butter, room temperature

  • 3/4 cup packed light brown sugar

  • 1/2 cup white sugar

  • 2 eggs

  • 1/2 vanilla extract

  • 1/2 teaspoon almond extract

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1/2 teaspoon salt

  • 1 cup coarsely shopped macadamia nuts

  • 1 cup white chocolate chips


Directions:

  1. In a large bowl, cream together butter, brown sugar and white sugar, until smooth.

  2. Beat in the eggs, one at a time.

  3. Stir in the vanilla and almond extracts.

  4. Mix the baking soda and salt into the flour.

  5. Thorough mix the flour mixture into the creamed butter and sugar mixture.

  6. Fold the macadamia nuts and white chocolate chips into the dough.

  7. Roll dough into little balls and space an inch apart on an ungreased cookie sheets.

  8. Bake for 10-12 minutes, or until done.
